I am officially back into the groove of things, remember last Friday when I said I could not find my camera charger and it mysteriously grew legs and walked itself behind my bed?…Well..this week I used my newly charged camera..it worked beautifully.
I ran into some technical issues with uploading my photos to my website, it was such a mess; but after several hours working with some engineers….I ENDED UP FIXING IT MYSELF!!!
So with that in mind I am so happy to say I am up and running for business.
I thought it would be fun to share with you this awesome Paleo Chocolate Mousse recipe I found on Delish, and what is even better it’s probably one of the most easiest desserts I’ve ever made, besides running to the grocery store and purchasing a dessert.
One thing you should know about me is I am not opposed to alternative ways to making a dessert healthier, I personally am not well trained in substation for healthier ingredients.
I was trained the French way of baking….butter…butter…and more butter!
I think you catch my drift….
Anyways, lets get into it..
Ingredients **I doubled the recipe**
2 Ripe Avocados
3/4 Heavy Cream
1/2 Cup Chocolate Chips, Melted
1/4 Cup Honey
3 Tablespoons Cocoa Powder
1 Teaspoon Vanilla
1/2 Teaspoon Salt
Chocolate Curls, for Garnish
- Melt your Chocolate Chips (I used the double boiling method), take the pit out of the Avocado and add Avocado and all your other ingredients into a food processor. Once your Chocolate Chips are melted add it too the food processor.
- Blend everything up. Scraps the bowl several times to make sure your Avocado is blended up, you don’t want chunks.
- Pour mixture into glass jars and refrigerate for at least 30 minutes.
My grocery store had a huge section of ripened Avocados, so I went nuts and bought a bunch of them to add to salads, bagels and to even snack on, but I have to admit…this dessert was the best result of me purchasing the Avocados.
All my ingredients are in my food processor that is old than me (turning 30 this year….shhh), but it still works amazingly well!
Look how smooth, it was amazing on how silky it looked. Please make sure to scrap the sides to make sure everything is blended up well. You don’t want chunks of Avocado in your finished product…kinda gross.
The consistency was like a pudding…and did I taste test it…OF COURSE! I am a tester…
I actually forgot about them in the fridge, but it did not affect them by any means. I added Blueberries instead of chocolate curls, I love fruit and chocolate combination…strawberries would be quite amazing as well.

As horrible as this is to admit, I actually left them in my fridge for two days uncovered…and they didn’t dry out…get get funky by any means…they were just as good as they were the first day!
