This year I have been on a kick for trying out new recipes, if you are anything like me I get bored with the same thing to eat. I need a variety. Besides eating Blueberries like they are candy; I can’t get enough Avocados or Cucumbers in my diet. They are a must have on a weekly basis. So I have been searching for recipes that I can incorporate Cucumbers and Avocados, it’s not easy but when I do come across one…
We try it out.
Last summer I came across Avocado Egg Salad on a Cucumber sprinkled with Everything Bagel seasoning from Trader Joes. The worst part is…I can’t find my original source where I got the recipe from…it’s from a blog…..a mom & family blog…I know that really narrows it down in the world of blogging. But I can’t find it to save my life and it’s driving me INSANE!

This recipe is so flavorful and light. It would make a perfect appetizer at a baby shower or a gatherings..and can I say it’s super easy to make. I mean…really…really…easy to make!
2 Avocados- Ripe
1 Cucumber- sliced
2 Eggs- Hard boiled stage
Salt & Pepper to taste
Everything Bagel seasoning- Get it here
- Cook your eggs to hard boil stage, peel them when they are cooled..and mash up.
- Gut your Avocados, removing the large pit. Combine 1 half of the Avocado to 1 egg, combine until it resembles egg salad. Doesn’t
- need to be perfect. Add a bit of Salt & Pepper.
- Slice up your Cucumber, put your Avocado and Egg mixture on top of the Cucumber slices. Sprinkle with Everything Bagel seasoning.
What I like most about this recipe is that it is so easy to make and it’s quite filling. This would great to serve at a Brunch with some girlfriends or make it for a snack.
