Easy Avocado Breakfast

I came across this recipe sometime last summer and absolutely loved it! I love avocado, which was not always the case. I remember once years ago when I was in Hawaii horse back riding down a mountain and at the end the instructors gave us these loaded sandwiches. And on them was slices of avocado. I remember not being thrilled about the avocado, picking it off and stuffing them inside of my napkin. I did not want to offend the instructors that made us the sandwiches. Now, many years later I now have a new love for avocados, if I could just teleport back in time when I threw my avocados away I would eat mine and then steal my brothers. If you like avocados and eggs why not give this super easy recipe a try for breakfast or a snack. On the bright side it is also gluten free!

Ingredients:Β 

1 Avocado

2 Eggs

Cheddar Cheese (to your liking)

2 Tbsp. Tostitos Medium Chunky Salsa

Salt (to taste)

Pepper (to taste)

 

Directions:

1. Preheat your oven to 425 degrees

2. Line a sheet tray with foil

3. Cut your avocados vertically so you end up with two halves.

4. Remove the pit

5. Scoop out about 3/4 of the avocado then place in a bowl

6. Place avocados on the lined sheet tray, gently place a whole egg in each of the avocado hales.

7. Bake in preheated oven for about 15 minutes until it is done do your liking.

8. When it is done garnish with the avocado that you scooped out earlier, 2 Tbsp. of Salsa, Cheddar Cheese, and then salt and pepper.

9. And thenΒ ENJOY!

Please be very careful when cutting your avocado open. Once your have sliced all the way around it, you can twist it off instead of pulling it off the pit.

Do they not look cute? I prefer my eggs for this recipe at almost a hard boil stage. So when I break open the yolk it does not run. This is all personal preference, but I do recommend letting it bake for about 15 minutes. Just keep an eye on it.

This is what mine looked like, as you can see the yolk was never runny it stayed intact. I only eat one half of the avocado, because it can be quite filling.This is a perfect recipe for sharing. Β You can put any kind of topping on there that you desire such as bacon, ham, or sausage. Whatever you think you would like. I personally would like to try some with pieces of bacon on top, but I do love it with the salsa and cheese. I once tried it with Sriracha, salsa and of course cheese it was really good if you wanted a spicy kick to it. What is nice with this dish is there is a lot of room for experimenting.
