Happy October 1st everyone!
This is a month that I look forward to all year long. I love everything about this month as I am sure a lot of people do.
So, let’s cut to the chase and talk about pumpkin! Pumpkin is my “bacon,” meaning Pumpkin makes everything better! I was never one of those people that would say “bacon makes everything better no matter what you put it on.” Bacon is good and all, but is it all what it’s cracked up to be?
A couple of weeks ago I was standing in line at the grocery store and I noticed this magazine that was just screaming my name! It was a Better Homes and Gardens Special Interest Publications; 100 Best Pumpkin Recipes.
Did I read that right? 100 Best Pumpkin Recipes. And it was in my cart coming home with me 2 seconds later.
I am excited to share with you a recipe from that magazine. It is super good and “Oh My Gosh,” so easy!
What You Need:
2- 15oz Cans of Pumpkin (3.5 Cups)
1 1/4 Cups Pure Maple Syrup
1/2 Cup Apple Juice
2 TBSP. Lemon Juice
1 tsp. Ground Ginger
1/2 tsp. Ground Cinnamon
1/2 tsp. Ground Nutmeg
1/4 tsp. Salt
What To Do:
- Combine all your ingredients into a heavy pot on the stove.
2. Stir all your ingredients together.
3. Bring to a boil; then reduce heat.
4. Allow everything to simmer for 25 minutes; until thickened.(If mixture spatters, reduce heat more).
5. Ladle hot Pumpkin Butter into hot sterilized half-pint canning jars, leaving 1/2 inch headspace. Allow to cool for 30 minutes, then label and seal.
*Please Note: Store in refrigerator up to 1 week or, if not using within 1 week or, ladle hot pumpkin butter into freezer containers, leaving a 1/2- inch headspace, freeze up to 6 months. My canning jars are 1 pint, so I ended up with 2 pints of Pumpkin with a little left over.*
We loved the Pumpkin Butter. I was catching Sophia sticking her fingers in it and eating it. I am sending my mom to work with a jar, because it does make a lot and I know we won’t eat 2 pints ourselves.
This would make a perfect small gift for any Pumpkin Lover!!
