Long time…no blog post! Before I start talking about my favorite cold pasta in the world, I want to express to everyone that reads my blog & my followers thank-you for being so patient with me. I highly appreciate it. My life is changing, it is something that I am getting used too…slowly but it’s changing. But out of respect for my family I am not going to go into any further details.
In the future I do plan on blogging more and sharing with you, so if you could be a tad bit more patient with me I promise that I will be more consistent.
So let’s talk about something that is more fun and positive….pasta! Carbs! hmmmm I feel better already!
My mom came across this recipe in the summer for her annual 4th of July party. At first I was a little apprehensive about it, because some of ingredients did not seem appealing to me all combined.
Boy was I wrong!
I believe I eat it for Breakfast, lunch and dinner when its made. It’s super easy! And oh-so-yummy…..yes I know I eat strangely.
One tip I can give you is to incorporate your spinach into the pasta about 20 minutes before serving. I like my spinach crunchy…but hey if you don’t mind your spinach wilted a bit then go for it!
I always add a lot more Craisins than what the recipe calls for. I just love Craisins, when I was in college I always kept a bag of them in my purse.
